- 1 ¼ cups all-purpose flour
- 1 tsp baking soda
- ¼ tsp salt
- ½ tsp ground cinnamon (optional)
- 3 ripe bananas, mashed (about 1 ¼ cups)
- ⅓ cup granulated sugar
- ⅓ cup brown sugar, packed
- ⅓ cup neutral oil (e.g., canola or vegetable)
- 1 large egg
- 1 tsp vanilla extract
- ½ cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
- In a separate bowl, mash bananas with a fork until mostly smooth. Stir in sugars, oil, egg, and vanilla until well combined.
- Pour wet ingredients into dry ingredients and stir just until combined. Fold in nuts or chocolate chips if using.
- Pour batter into prepared pan and smooth the top.
- Bake 55–65 minutes, or until a toothpick inserted in center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For extra moisture, add ¼ cup Greek yogurt or sour cream.
- Use very ripe bananas with brown spots—frozen and thawed works great too!
- Store cooled loaf wrapped at room temperature for up to 2 days, or refrigerate for up to 5 days.
