- 3 very ripe bananas, mashed (about 1 1/4 cups)
- 2 large eggs
- 3/4 cup all-purpose flour or whole wheat flour
Instructions
- Preheat oven to 350°F (175°C). Grease a 5×9-inch loaf pan.
- In a medium bowl, mash bananas with a fork until smooth. Whisk in eggs until fully combined.
- Stir in flour until just incorporated — do not overmix.
- Pour batter into prepared pan and smooth the top.
- Bake for 40–45 minutes, or until a toothpick inserted in center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra moisture, add 1/4 cup yogurt or applesauce (making it 4 ingredients).
- Use overripe bananas with lots of brown spots for maximum sweetness.
- To make gluten-free, use certified GF oat flour or almond flour (add 1 tsp baking powder).
