- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup diced onion
- 1 cup salsa
- 2 tablespoons taco seasoning
- 1/2 cup chopped cilantro
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional, for topping)
Instructions
- In a large mixing bowl, combine the ground beef, ground pork, diced onion, taco seasoning, and 1/2 cup of salsa.
- Add the breadcrumbs, eggs, and chopped cilantro into the mixture. Season with salt and pepper. Mix everything together until thoroughly combined.
- Transfer the meat mixture to a greased baking dish and shape it into a loaf.
- Spread the remaining salsa on top of the meatloaf, sprinkle with shredded cheese if desired, and bake at 350°F (175°C) for approximately 1 hour or until fully cooked.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
- This meatloaf can be made ahead of time and stored in the refrigerator for 24 hours before baking.
- Best served with Mexican rice, fresh salad, or grilled vegetables for a complete meal.
