Ingredients

  • 2 lbs beef chuck roast, cut into chunks
  • 1 cup red wine

  • 8 oz mushrooms, sliced
  • 6 pearl onions, peeled
  • 4 slices bacon, chopped
  • 2 carrots, sliced
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook bacon until crispy, then set aside.
  2. In a slow cooker, add olive oil and brown beef chunks on all sides.
  3. Add onions, garlic, carrots, mushrooms, bacon, tomato paste, thyme, bay leaves, salt, and pepper to the slow cooker.
  4. Pour in red wine and stir to combine.
  5. Cook on low for 8 hours until beef is tender and flavors meld.
