- 2 lbs beef chuck roast, cut into chunks
- 1 cup red wine
- 2 tablespoons olive oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 6 pearl onions, peeled
- 4 slices bacon, chopped
- 2 carrots, sliced
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a skillet, cook bacon until crispy, then set aside.
- In a slow cooker, add olive oil and brown beef chunks on all sides.
- Add onions, garlic, carrots, mushrooms, bacon, tomato paste, thyme, bay leaves, salt, and pepper to the slow cooker.
- Pour in red wine and stir to combine.
- Cook on low for 8 hours until beef is tender and flavors meld.

- Serve over mashed potatoes or crusty bread for a complete meal.
- You can substitute red wine with beef broth for an alcohol-free version.
