- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup mini marshmallows
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, baking soda, and salt.
- In a separate bowl, mix the melted butter, brown sugar, and granulated sugar until well combined. Add the egg and vanilla, whisking until smooth.
- Chop the mini marshmallows and fold them (and chocolate chips if using) into the wet mixture.
- Using a cookie scoop, drop dollops of dough onto a parchment-lined baking tray.
- Bake for 10-12 minutes or until the edges are golden brown. Allow to cool before transferring to a wire rack.
Notes
- Store cookies in an airtight container at room temperature for up to a week.
- Freeze cookies wrapped in plastic wrap for up to three months.
- Try serving with vanilla ice cream or drizzled chocolate sauce for an added treat!
