Ingredients
Scale
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon zest
- 2 tablespoons fresh lemon juice
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- In a large mixing bowl, cream together the sugar and softened butter until light and fluffy. Add in the egg, vanilla extract, fresh lemon zest, and lemon juice, mixing well to combine.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, stirring until a soft dough forms.
- Preheat your oven to 350°F (175°C). Use a cookie scoop or a tablespoon to drop rounded balls of dough onto a lined baking sheet and flatten them slightly to form discs.
- Bake for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
