Instructions
- Preheat oven to 350°F (175°C). In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk Greek yogurt, vegetable oil, eggs, lemon zest, lemon juice, and vanilla extract until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
- Gently fold in the blueberries, tossing them in a little flour if desired to prevent sinking.
- Pour batter into a greased 9×5-inch loaf pan. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack. Serve warm or at room temperature.
