- 2 boneless, skinless chicken breasts (6 oz each)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 ripe avocado, sliced
- 2 tbsp fresh lime juice
- 1 tbsp fresh cilantro, chopped
- 1 small broccoli crown, chopped into florets
- ½ cup cherry tomatoes
- 1 tsp olive oil (for veggies)
- Pinch of salt and pepper
Instructions
- Preheat grill or grill pan over medium-high heat.
- In a small bowl, mix smoked paprika, garlic powder, salt, pepper, and 1 tbsp olive oil. Rub mixture onto chicken breasts.
- Grill chicken 6–7 minutes per side, until internal temperature reaches 165°F. Let rest 5 minutes.
- While chicken cooks, toss broccoli and tomatoes with 1 tsp olive oil, salt, and pepper. Grill or roast at 425°F for 12–15 minutes, flipping halfway.
- Mix lime juice and chopped cilantro in a small bowl for the dressing.
- Serve chicken topped with avocado slices and a drizzle of lime-cilantro dressing, alongside grilled vegetables.
Notes
- For extra flavor, marinate chicken in the spice-oil mixture for 30 minutes before grilling.
- No grill? Use a grill pan or roast in oven at 425°F for 18–20 minutes.
- Add a sprinkle of red pepper flakes to the dressing for heat.
