Ingredients
Scale
- 1 cup fresh lemon juice (approximately 4–5 lemons)
- 1 tablespoon lemon zest
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup unsalted butter, cubed
- 2 teaspoons cornstarch (optional for thickening)
- Pinch of salt
Instructions
- Combine Lemon Juice and Zest: In a medium saucepan, whisk together the fresh lemon juice, lemon zest, and sugar until well blended.
- Cook the Mixture: Heat over medium heat, stirring constantly, until it begins to simmer.
- Incorporate Eggs: Beat the eggs in a small bowl. Gradually add a few spoonfuls of hot lemon mixture to temper, then pour back into the saucepan while whisking continuously.
- Thicken the Spread: Continue cooking on low heat until thickened, about 5-7 minutes. Add dissolved cornstarch for extra thickness if desired.
- Add Butter and Salt: Remove from heat and stir in cubed butter and a pinch of salt until smooth and glossy.
Notes
- Ensure to whisk constantly during cooking to prevent curdling.
- Chill the spread for at least 2 hours before serving for optimal flavor.
- Can be stored in an airtight container in the refrigerator for up to two weeks.
- For vegan options, substitute butter with coconut oil or plant-based butter.
