Ingredients
Scale
- 1 lb gnocchi (store-bought or homemade)
- 3 large French onion or sweet onions, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 cup shredded cheese blend (mozzarella, Gruyère, Parmesan)
- 1/2 cup beef or vegetable broth
- 2 teaspoons fresh thyme (or 1 teaspoon dried)
- Salt and freshly ground black pepper, to taste
- Optional: Baguette slices for serving
Instructions
- In a large skillet, heat olive oil and butter over medium heat. Add sliced onions and cook slowly, stirring occasionally, until golden brown and caramelized, about 20-30 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the surface, about 2-3 minutes. Drain and set aside. For extra crispiness, pan-fry the cooked gnocchi in a little oil until golden brown.
- Pour beef or vegetable broth into the same skillet used for onions, scraping up browned bits. Stir in caramelized onions and thyme; simmer for a few minutes to meld flavors. Add cooked gnocchi back to the skillet, coating them with the sauce. Top generously with shredded cheese and let melt.
- Transfer to a serving dish. Serve hot with toasted baguette slices or garlic bread for a complete, comforting meal.
Notes
- For vegan version, substitute cheese with vegan cheese and use vegetable broth.
- Fresh homemade gnocchi can be used for more flavor and texture.
- Adding a pinch of sugar or balsamic vinegar enhances caramelized onion sweetness.
- Serve with a side salad or roasted vegetables for a balanced meal.
