- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup butterscotch sauce
- Whipped cream for topping
- Additional butterscotch sauce for drizzling
Instructions
- Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs and melted butter, then press into the bottom of a greased 9×9-inch baking dish.
- In a large mixing bowl, beat together the softened cream cheese and granulated sugar until smooth. Add eggs one at a time and mix in vanilla extract.
- Gently fold in the butterscotch sauce into the creamy mixture.
- Pour the cheesecake filling over the crust and smooth the top. Bake for 35 to 40 minutes, until the center is set. Cool completely and refrigerate before slicing.
Notes
- Store the cheesecake bars in an airtight container in the fridge for up to a week.
- For longer storage, wrap bars individually and freeze for up to 2 months.
- These bars can be made a day in advance for improved flavor.
