- 1 ½ cups graham cracker crumbs (for the golden crust)
- ¾ cup granulated sugar (divided)
- ½ cup unsalted butter, melted (for crust and filling)
- 3 (8 oz) packages cream cheese, softened
- ½ cup sour cream
- 3 large eggs
- 1 cup butterscotch sauce
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a large mixing bowl, combine the softened cream cheese and ½ cup of granulated sugar. Blend until smooth and creamy.
- Mix the graham cracker crumbs, melted butter, and ¼ cup of granulated sugar in a medium bowl. Press firmly into the bottom of a springform pan and bake at 350°F (175°C) for about 10 minutes. Cool the crust.
- Once the crust is cooled, mix in the butterscotch sauce, sour cream, eggs, vanilla extract, and salt into the creamy mixture. Blend until combined.
- Pour the filling into the golden crust and spread evenly. Bake at 325°F (160°C) for about 55-60 minutes. Cool and refrigerate for at least four hours.
Notes
- Store leftovers in an airtight container for up to 5 days.
- For serving, top with extra butterscotch sauce and whipped cream.
- Crushed graham crackers can be sprinkled on top for texture.
