Ingredients

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook orzo in boiling chicken broth until tender, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken slices, season with salt and pepper, and cook until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant, then add cherry tomatoes and cook until slightly softened.
  4. Add cooked orzo, spinach, and cooked chicken back into the skillet. Stir to combine and cook for another 2-3 minutes until heated through.
  5. Garnish with fresh parsley and serve hot.
