- 1 lb chicken breast, sliced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup spinach leaves
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook orzo in boiling chicken broth until tender, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chicken slices, season with salt and pepper, and cook until golden and cooked through. Remove and set aside.
- In the same skillet, sauté garlic until fragrant, then add cherry tomatoes and cook until slightly softened.
- Add cooked orzo, spinach, and cooked chicken back into the skillet. Stir to combine and cook for another 2-3 minutes until heated through.
- Garnish with fresh parsley and serve hot.
Notes
- Feel free to add grated Parmesan cheese for extra flavor.
- You can substitute chicken with turkey or tofu for variety.
