  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • Optional: powdered sugar for dusting

Instructions

  1. Combine diced peaches, sugar, lemon juice, and vanilla extract in a bowl. Mix well and set aside.
  2. In a large bowl, mix flour, oats, cinnamon, and salt. Add cold butter and blend until crumbly. Reserve one-third for topping.
  3. Press the remaining crust mixture into a greased baking pan. Spread the peach mixture evenly over the crust.
  4. Sprinkle the reserved crumb mixture over the top.
  5. Bake at 350°F (175°C) for 35-40 minutes until golden brown. Cool before slicing.

  • Use fully thawed frozen peaches if fresh are unavailable.
