- 2 cups fresh peaches, diced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- Optional: powdered sugar for dusting
Instructions
- Combine diced peaches, sugar, lemon juice, and vanilla extract in a bowl. Mix well and set aside.
- In a large bowl, mix flour, oats, cinnamon, and salt. Add cold butter and blend until crumbly. Reserve one-third for topping.
- Press the remaining crust mixture into a greased baking pan. Spread the peach mixture evenly over the crust.
- Sprinkle the reserved crumb mixture over the top.
- Bake at 350°F (175°C) for 35-40 minutes until golden brown. Cool before slicing.
Notes
- Use fully thawed frozen peaches if fresh are unavailable.
- Add a splash of bourbon or almond extract for a flavor twist.
- For gluten-free version, substitute all-purpose flour with almond flour or gluten-free baking mix.
