Ingredients
- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- ½ cup unsalted butter, melted
- 1 can (14 oz) sweetened condensed milk
- ½ cup fresh lime juice (preferably key limes)
- 1 tablespoon lime zest
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Optional: lime slices and mint leaves for garnish
Instructions
- Combine graham cracker crumbs and granulated sugar in a bowl. Stir in melted butter until evenly coated. Divide among mini pie molds or ramekins, press down to form a crust, and refrigerate for 30 minutes.
- Whisk together sweetened condensed milk, lime juice, and lime zest in a separate bowl. Pour over the chilled crust and chill in the refrigerator for at least 2 hours or until set.
- Beat heavy cream with powdered sugar until stiff peaks form. Spread or pipe over the set lime filling for a fluffy topping.
- Garnish with lime slices and mint leaves if desired. Serve immediately or store in the fridge for later enjoyment.
Notes
- Chill the assembled pies for at least 2 hours for optimal flavor and texture.
- Use fresh lime juice for the best citrus flavor; bottled lime juice can be substituted if necessary.
- Decorate with lime slices and mint for a beautiful presentation.
