Ingredients
Scale
- 1 lb ground beef
- 2 large potatoes, diced
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Monterey Jack)
- Fresh toppings: chopped lettuce, tomatoes, cilantro, sour cream, and sliced jalapeños
- Optional: hot sauce or salsa for extra flavor
Instructions
- Start by dicing the potatoes into small cubes to ensure they cook evenly. Chop the onions and mincethe garlic cloves. Gather all your ingredients so you’re ready to cook seamlessly.
- Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook until crispy and golden, about 10-12 minutes. Season with a pinch of salt and pepper, then remove and set aside.
- In the same skillet, add a little more oil if needed. Sauté the onions and garlic until fragrant, about 2-3 minutes. Add the ground beef and cook until browned, breaking it apart with a spoon. Stir in chili powder, cumin, paprika, salt, and pepper for a flavorful seasoning.
- Combine the cooked potatoes with the beef mixture and stir well. Spoon the mixture into bowls and sprinkle with shredded cheese. Place under a broiler for 2-3 minutes or until the cheese melts.
- Top your ground beef and potato taco bowl with fresh lettuce, diced tomatoes, cilantro, sour cream, and sliced jalapeños for an extra burst of flavor and texture. For a spicy kick, add some hot sauce or salsa.
Notes
- Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat thoroughly in the microwave or on the stovetop. Add fresh toppings like lettuce and sour cream when serving again for maximum freshness.
- You can customize this taco bowl by substituting the ground beef with plant-based options or additional vegetables for a vegetarian version.
