- 4 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 1 cup beef or chicken broth
- 1 tablespoon olive oil
- 1 teaspoon thyme (dried or fresh)
- Salt and pepper to taste
- 1 cup shredded Gruyère or Swiss cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced onions and cook slowly until golden brown and caramelized, about 20-25 minutes. Add minced garlic during the last 2 minutes.
- Season chicken breasts with salt, pepper, and thyme. Sear in a skillet over medium-high heat until golden brown on both sides, about 3-4 minutes per side. Set aside.
- Preheat oven to 375°F (190°C). Spread caramelized onions at the bottom of a baking dish. Place seared chicken breasts on top of the onions. Pour broth over the chicken.
- Sprinkle shredded cheese generously over the chicken and onions. Optionally, add herbs or a drizzle of balsamic vinegar.
- Bake uncovered for 25-30 minutes, or until chicken reaches internal temperature of 165°F (75°C) and cheese is bubbly and golden.
