  • 1 cup beef or chicken broth

  • 1 cup shredded Gruyère or Swiss cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and cook slowly until golden brown and caramelized, about 20-25 minutes. Add minced garlic during the last 2 minutes.
  2. Season chicken breasts with salt, pepper, and thyme. Sear in a skillet over medium-high heat until golden brown on both sides, about 3-4 minutes per side. Set aside.
  3. Preheat oven to 375°F (190°C). Spread caramelized onions at the bottom of a baking dish. Place seared chicken breasts on top of the onions. Pour broth over the chicken.
  4. Sprinkle shredded cheese generously over the chicken and onions. Optionally, add herbs or a drizzle of balsamic vinegar.
  5. Bake uncovered for 25-30 minutes, or until chicken reaches internal temperature of 165°F (75°C) and cheese is bubbly and golden.
