- 1 lb beef stew meat, cubed
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 can diced tomatoes
- 1 can kidney beans, drained
- 4 cups beef broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and cook until browned.
- Stir in chopped onion and minced garlic, cook until translucent.
- Add carrots, potatoes, diced tomatoes, beans, broth, paprika, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours until beef is tender.
- Serve hot with crusty bread, garnish with fresh herbs if desired.

- You can substitute beef with ground turkey or chicken for a lighter version.
- Adjust seasoning as per taste.
