Instructions
- Preheat your oven to 425°F (220°C). Toss diced potatoes with a tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 20-25 minutes until golden and crispy, flipping halfway through.
- While the potatoes are roasting, heat a large skillet over medium heat. Add a splash of olive oil and sauté the ground beef until browned and cooked through. Stir in the taco seasoning and a splash of water, simmering until thickened and flavorful.
- Layer the crispy roasted potatoes at the bottom of each bowl. Top with seasoned ground beef, then sprinkle with shredded cheddar cheese, diced tomatoes, red onions, and cilantro. Finish with a dollop of sour cream for coolness and balance.
