  • 12 lasagna noodles
  • 2 tablespoons olive oil
  • 3 cups sliced mushrooms
  • 3 cups fresh spinach, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups heavy cream
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent. Then, add the sliced mushrooms and cook until tender. Stir in the minced garlic and cook for another minute. Add the chopped spinach and cook until wilted. Season with salt, pepper, and oregano. Remove from heat.
  3. In a saucepan, combine the heavy cream and Parmesan cheese. Warm over low heat, stirring continuously until the cheese melts and the sauce thickens slightly. Season with additional salt and pepper if needed.
  4. Preheat your oven to 375°F (190°C). Spread a thin layer of the cream sauce at the bottom of a 9×13-inch baking dish. Layer with lasagna noodles, then spread half of the sautéed vegetables, dollops of ricotta, and sprinkle with mozzarella. Repeat to create another layer, finishing with a final layer of noodles topped with the remaining cream sauce and shredded mozzarella. Garnish with extra Parmesan if desired.
  5. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 10 minutes, or until bubbly and golden on top. Let rest for 10 minutes before serving.
