- 4 boneless, skinless chicken breasts
- 2 bell peppers, sliced
- 1 red onion, sliced
- 4 small potatoes, cubed
- 3 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh lemon wedges and chopped parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix olive oil, oregano, garlic powder, paprika, salt, and pepper.
- Marinate chicken breasts in half of the herb mixture for 10 minutes.
- Place potatoes, bell peppers, and red onions on a baking sheet. Toss with remaining herb mixture.
- Add the marinated chicken breasts on top of the vegetables.
- Bake for 25-30 minutes until chicken is cooked through and vegetables are tender and slightly caramelized.
- Garnish with fresh parsley and lemon wedges before serving.
Notes
- For extra flavor, add a splash of lemon juice before serving.
- You can substitute chicken with turkey or pork for variation.
