Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 4 small potatoes, cubed
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh lemon wedges and chopped parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, oregano, garlic powder, paprika, salt, and pepper.
  3. Marinate chicken breasts in half of the herb mixture for 10 minutes.
  4. Place potatoes, bell peppers, and red onions on a baking sheet. Toss with remaining herb mixture.
