Instructions
- Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Roast for 25-30 minutes until tender and crispy.
- Meanwhile, season chicken slices with salt, pepper, and a little olive oil. Grill or sauté until cooked through and nicely browned.
- In a bowl, arrange fresh spinach, roasted sweet potatoes, and grilled chicken slices. Add optional toppings like sliced avocado, feta, and herbs.
- Drizzle with your favorite dressing or additional olive oil. Serve immediately.
