- 1 cup of graham cracker crumbs

- 1/3 cup of sugar
- 1/2 cup of unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup of brown sugar, packed
- 1 teaspoon of vanilla extract
- 1/2 cup of heavy cream
- 1/2 cup butterscotch sauce (store-bought or homemade)
- Whipped cream for topping
Instructions
- In a large mixing bowl, combine softened cream cheese and brown sugar. Beat until smooth and creamy.
- In a saucepan over medium heat, combine heavy cream and butterscotch sauce. Whisk until smooth and let cool slightly before adding to the cheesecake mixture.
- In a separate bowl, mix graham cracker crumbs, cocoa powder, sugar, and melted butter. Press into the bottom of individual serving cups for the crust.
- Layer the cheesecake mixture over the crust in each cup. Smooth the tops with a spatula. Refrigerate for at least 3 hours to set.
Notes
- These cheesecake cups can be made ahead of time and stored in the refrigerator for up to 3 days.
