Instructions
- In a bowl, combine 1 cup of crushed graham crackers with 4 tablespoons of melted butter. Mix until well coated to create the base.
- In a separate bowl, blend together 16 oz softened cream cheese, 1 cup powdered sugar, 1 cup butterscotch sauce, 1 teaspoon vanilla extract, and 1/2 teaspoon salt until smooth and creamy.
- Fill popsicle molds halfway with the graham cracker mixture, then add the cheesecake filling on top, swirling lightly. Freeze for at least 4 hours or until solid.
- Once frozen, dip each pop into melted chocolate, letting excess drip off, then drizzle with warm butterscotch sauce.
