- 1/2 cup granulated sugar
- 1/4 cup butterscotch extract
- 1 cup whipped topping
- 1 cup crushed graham crackers
- 1/4 cup melted butter
- 1/2 cup butterscotch sauce (for drizzling)
- Optional: lollipop sticks or festive sprinkles
Instructions
- In a large mixing bowl, combine softened cream cheese and granulated sugar; beat until smooth.
- Add butterscotch extract and mix until fully incorporated.
- Gently fold in whipped topping until light and airy.
- In a separate bowl, mix crushed graham crackers and melted butter; press into the bottom of popsicle molds.
- Pour cheesecake mixture over the graham cracker crust in the molds.
- Insert lollipop sticks if using, and freeze for at least 4 hours or until solid.
- Once frozen, gently remove pops from molds and drizzle with warm butterscotch sauce.
Notes
- Store leftover pops in an airtight container in the freezer for up to 2 weeks.
- For best taste, consume within a week of making.
- These pops can be made gluten-free by using gluten-free graham crackers.
