Instructions
- Gather all ingredients and preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or lightly grease it with non-stick spray.
- In a large bowl, whisk together the protein powder, unsweetened cocoa powder, almond flour, and salt until evenly combined.
- In a separate bowl, whisk together the eggs, honey (or maple syrup), almond milk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture and stir until a thick, fudgy batter forms. Fold in dark chocolate chips if desired.
- Distribute the batter evenly into the prepared mini muffin tin using a spoon or small cookie scoop. Bake for 10-12 minutes or until a toothpick inserted into the center comes out clean.
- Allow the brownie bites to cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm or store in an airtight container.
