- 1.5 cups crushed shortbread cookies
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup granulated sugar (for filling)
- 1/3 cup fresh lemon juice
- 1 tsp lemon zest
- 1–2 tsp dried lavender flowers
- 3 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat the oven and prepare the shortbread crust by mixing crushed shortbread cookies, melted butter, and granulated sugar.
- In a separate bowl, cream together softened cream cheese, granulated sugar, lemon juice, lemon zest, and dried lavender until smooth.
- Pour the cheesecake filling over the prepared shortbread crust and spread evenly.
- Bake in a preheated oven until golden and set, then allow to cool completely before slicing.
- Chill in the refrigerator for a couple of hours before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- These bars are best served chilled for a refreshing treat.
- Decorate with fresh lavender or lemon zest for an elegant presentation.
