Instructions
- In a large mixing bowl, combine gluten-free all-purpose flour, sugar, brown sugar, baking soda, and salt. Stir until well mixed.
- In a separate bowl, whisk together melted butter and vanilla extract until combined.
- Pour the wet mixture into the flour mixture. Stir well until a dough forms. Fold in diced apples and rolled oats.
- Using a cookie scoop, place the dough onto a baking tray lined with parchment paper. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes or until golden brown. Allow to cool before serving.
