- 2 cups cooked orzo pasta
- 1 lb boneless chicken thighs, diced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 cup shredded Gruyere or Swiss cheese
- 1 cup chicken broth
- 1/2 cup sour cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Cook onions until caramelized, about 15 minutes. Add garlic and cook for 1 minute.
- In a bowl, mix cooked orzo, diced chicken, sour cream, chicken broth, salt, and pepper.
- Transfer to a casserole dish. Top with caramelized onions and shredded cheese.
- Bake for 20-25 minutes until bubbly and golden brown. Garnish with fresh thyme before serving.
Notes
- Feel free to add sautéed mushrooms or spinach for extra flavor.
- Use leftover cooked chicken or rotisserie chicken for faster preparation.
