  • 1 lb boneless chicken thighs, diced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 cup shredded Gruyere or Swiss cheese
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Cook onions until caramelized, about 15 minutes. Add garlic and cook for 1 minute.
  3. In a bowl, mix cooked orzo, diced chicken, sour cream, chicken broth, salt, and pepper.
  4. Transfer to a casserole dish. Top with caramelized onions and shredded cheese.
  5. Bake for 20-25 minutes until bubbly and golden brown. Garnish with fresh thyme before serving.
