Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, powdered sugar, baking powder, and salt.
- In a separate bowl, beat butter, eggs, vanilla, and food coloring until smooth.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in chopped pistachios.
- Drop spoonfuls of dough onto prepared baking sheets, flatten slightly.
- Bake for 10-12 minutes until lightly golden.
- Cool on wire racks before serving.

- For a more vibrant color, add extra food coloring.
