- 4 large eggs
- 2 tbsp mayonnaise
- 1 tsp soy sauce
- Salt and pepper to taste
- 8 slices white bread
- Butter or margarine (optional)
Instructions
- Boil the eggs until hard-boiled, then peel and mash in a bowl.
- Add mayonnaise, soy sauce, salt, and pepper to the eggs and mix until smooth.
- Spread butter on bread slices if desired.
- Spread the egg mixture evenly on 4 slices of bread and top with remaining slices.
- Gently press and slice the sandwiches diagonally or into halves.
Notes
- For extra flavor, add a sprinkle of chopped chives or scallions.
