- 12 potstickers (store-bought or homemade)
- 8 oz rice noodles or lo mein
- 1 cup sliced bell peppers
- 1 cup shredded carrots
- 2 scallions, chopped
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 2 cloves garlic, minced
- 1 tbsp sesame seeds
- Fresh cilantro for garnish (optional)
Instructions
- Cook the potstickers according to package instructions until crispy and golden. Set aside.
- Cook noodles according to package directions, drain, and set aside.
- In a large skillet or wok, heat sesame oil over medium-high heat. Add garlic and ginger, sauté until fragrant.
- Add sliced bell peppers and carrots, cook until tender-crisp.
- Stir in cooked noodles, soy sauce, and toss to combine.
- Place crispy potstickers on top of the noodles, sprinkle with sesame seeds and scallions.
- Garnish with cilantro if desired, serve hot.
Notes
- For extra flavor, add a drizzle of Sriracha or chili oil.
- Use fresh or frozen potstickers, adjust cooking time accordingly.
