Instructions
- In a large bowl, combine curry powder, olive oil, garlic powder, onion powder, paprika, and season with salt and pepper. Add chicken thighs, ensuring they are coated.
- Preheat air fryer to 380°F (193°C).
- Place marinated chicken thighs in air fryer basket in a single layer.
- Cook for 25-30 minutes, flipping halfway through for even browning.
- Check that the internal temperature of chicken thighs has reached 165°F (74°C).
- Serve the chicken over rice or with a salad, and garnish with chopped cilantro.
Notes
- Leftovers can be stored in an airtight container for up to 3 days.
- Reheat in air fryer at 350°F (175°C) for 5-7 minutes to restore crispiness.
- Boneless thighs can be used; adjust cooking time as needed.
