- 2 packs of ramen noodles (discard seasoning packets or save for another use)
- 1 lb boneless, skinless chicken breasts or thighs, sliced thinly
- 2 cups mixed vegetables (bell peppers, carrots, snow peas, broccoli)
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 3 tablespoons soy sauce or tamari for a gluten-free option
- 2 tablespoons oyster sauce or hoisin sauce
- 1 tablespoon sesame oil
- 2 green onions, sliced for garnish
- Optional: red pepper flakes for extra heat
Instructions
- Begin by boiling a large pot of water. Add the ramen noodles and cook according to package instructions, usually about 2-3 minutes. Drain and set aside.
- While the noodles are cooking, heat a tablespoon of CAROTE Premium 16pc Nonstick Cookware Set to medium-high heat. Add the sliced chicken and season with a pinch of salt. Cook for 5-7 minutes, until browned and cooked through. Remove from the pan and set aside.
- Using the same pan, add a little sesame oil and stir-fry the mixed vegetables until tender-crisp, about 3-5 minutes. Toss in the garlic and ginger during the last minute of sautéing for added aroma.
- Return the cooked chicken to the pan with vegetables. Add the soy sauce and oyster sauce, mixing well. Stir in the cooked ramen noodles and toss everything together until evenly coated with the sauce. For an extra kick, sprinkle red pepper flakes if desired.
- Plate your flavorful chicken ramen stir fry in bowls, and garnish with sliced green onions. Optionally, add sesame seeds or a squeeze of lime for a fresh finish.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet or microwave, adding a splash of water or broth to keep the noodles moist. Avoid freezing, as the texture of the noodles may change.
