- 4 cod fillets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup coconut milk
- Juice and zest of 1 lemon
- 2 cloves garlic, minced
- 1 teaspoon turmeric
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Season cod fillets with salt and pepper.
- Heat olive oil in a skillet over medium heat and sear the fillets for 2-3 minutes per side until golden.
- Transfer to a baking dish and bake for 12-15 minutes until flaky.
- Meanwhile, in a saucepan, combine coconut milk, lemon juice and zest, minced garlic, and turmeric. Simmer until slightly thickened.
- Pour the coconut lemon cream sauce over the baked cod and garnish with fresh parsley.

- Serve with steamed vegetables or rice for a complete meal.
- Adjust lemon to taste for more zest.
