- For the Crust:
- 1 ½ cups graham cracker crumbs
- ½ cup brown sugar
- ½ cup unsalted butter, melted

- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- ½ cup sour cream
- 1 teaspoon vanilla extract
- 1 teaspoon butter extract
- ½ cup butterscotch sauce
- For Topping:
- Whipped cream
- Extra butterscotch sauce
Instructions
- In a mixing bowl, combine graham cracker crumbs, brown sugar, and melted butter until it resembles wet sand. Press it firmly into the bottom of a 9-inch springform pan.
- In another bowl, beat softened cream cheese until smooth. Gradually add granulated sugar, sour cream, vanilla extract, and butter extract. Fold in butterscotch sauce.
- Pour the creamy filling into the prepared crust, smoothing the top. Tap the pan to remove air bubbles.
- Preheat your oven to 325°F (160°C). Bake for 50 to 60 minutes until the center is slightly jiggly. Turn off the oven and let cool gradually.

- Store leftovers in an airtight container in the refrigerator for up to five days.
- For longer storage, freeze individual slices wrapped in plastic.
- Top with whipped cream and butterscotch sauce before serving.
