- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup sour cream
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup butterscotch chips
- 1/4 cup caramel sauce
- 1 teaspoon ground cinnamon
- 1 cup whipped cream
Instructions
- Preheat oven to 325°F. Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese until smooth. Add sour cream, sugar, and vanilla. Mix until well combined.
- Fold in butterscotch chips and caramel sauce. Pour over crust.
- Bake for 55-60 minutes until the center is set. Let cool, then refrigerate for at least 4 hours.
- Top with whipped cream, a drizzle of caramel sauce, and a sprinkle of cinnamon before serving.

- For added flavor, sprinkle with crushed toffee or cookie crumbs.
