- Preparing the Peaches: Toss sliced peaches with brown sugar, lemon juice, and vanilla extract. Let sit for about 10 minutes to macerate.
- Assembling the Galette: Preheat oven to 400°F (200°C). Roll out chilled dough on a floured surface into a 12-inch circle. Transfer to a parchment-lined baking sheet. Arrange peach slices in the center with a 2-inch border. Fold the edges over the fruit, pleating to create a rustic appearance. Brush with beaten egg and sprinkle with sugar.
- Baking the Galette: Bake for 35-40 minutes until the crust is golden and peaches are bubbly. Cool slightly before serving.
