Instructions
- In a large mixing bowl, combine all-purpose flour, baking powder, and salt.
- In a separate bowl, mix melted butter, granulated sugar, egg, and vanilla extract until smooth.
- Gradually add the wet ingredients into the dry ingredients, mixing until a consistent cookie dough forms.
- In another bowl, beat softened cream cheese until smooth, then fold in crushed strawberries.
- Preheat your oven to 350°F (175°C).
- Scoop a tablespoon of cookie dough, flatten it, and add a teaspoon of cheesecake filling in the center.
- Fold the dough around the filling, roll into a ball, and place on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes until slightly golden around the edges and allow to cool before serving.
