- 8 oz ramen noodles
- 4 cups vegetable broth
- 1 cup sliced mushrooms
- 1 cup chopped bok choy
- 1/2 cup sliced green onions
- 1/2 cup diced tofu
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
Instructions
- Cook ramen noodles according to package instructions, drain and set aside.
- In a pot, heat vegetable broth and add ginger, garlic, soy sauce, and sesame oil, simmer for 5 minutes.
- Add mushrooms and bok choy, cook until tender.
- Divide cooked noodles into bowls, ladle hot broth with vegetables and tofu over noodles.
- Garnish with green onions and sesame seeds, serve hot.
Notes
- Feel free to add your favorite vegetables like spinach or carrots.
- Make it spicier with chili flakes if desired.
