- 1 pound Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 package (9 oz) refrigerated tortellini
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese and fresh basil for garnish
Instructions
- In a large pot, cook Italian sausage over medium heat until browned. Remove excess fat.
- Add diced onion and garlic; sauté until translucent.
- Pour in chicken broth and diced tomatoes; bring to a simmer.
- Add tortellini and Italian seasoning; cook until tortellini is tender, about 8 minutes.
- Stir in spinach and cook for 2 more minutes.
- Season with salt and pepper, garnish with Parmesan and basil, and serve hot.
Notes
- You can substitute spinach with kale or other greens.
- For an extra kick, add red pepper flakes.
