- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp vanilla extract (optional)
- Non-stick cooking spray or butter (for greasing)
Instructions
- Soften the ice cream by letting it sit at room temperature for 10-15 minutes until soft but not melted.
- In a large bowl, combine the softened ice cream, flour, sugar, baking powder, and vanilla extract (if using). Stir until smooth.
- Grease a standard loaf pan with non-stick spray or butter, then pour in the batter and spread evenly.
- Preheat oven to 350°F (175°C) and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let cool before slicing.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month.
- Experiment with different ice cream flavors like chocolate or strawberry for variety.
- For a gluten-free version, substitute all-purpose flour with a gluten-free blend.
- Top with whipped cream, berries, or chocolate sauce for extra indulgence.
