- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream (optional)
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- Leafy lettuce (for garnish)
Instructions
- Heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Add the taco seasoning and water to the cooked beef. Stir well and simmer for 5 minutes until the mixture thickens.
- Warm the flour tortillas in a dry skillet or microwave for a few seconds until pliable.
- Lay a tortilla flat on a plate. Spread some of the seasoned beef in the center. Top with shredded cheeses, diced onions, and tomatoes. Add sour cream if desired.
- Fold the sides of the tortilla in and roll tightly to enclose the filling. Place in a preheated skillet or on a baking sheet. Top with extra cheese if preferred. Cover and cook over low heat or bake at 350°F (175°C) for about 10 minutes until the cheese melts and is bubbly.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 1-2 minutes or in the oven at 350°F (175°C) for about 10 minutes. To maintain crispiness, reassemble and re-melt cheese in a skillet or oven before serving.
