  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream (optional)
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • Leafy lettuce (for garnish)

Instructions

  1. Heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
  2. Add the taco seasoning and water to the cooked beef. Stir well and simmer for 5 minutes until the mixture thickens.
  3. Warm the flour tortillas in a dry skillet or microwave for a few seconds until pliable.
  4. Lay a tortilla flat on a plate. Spread some of the seasoned beef in the center. Top with shredded cheeses, diced onions, and tomatoes. Add sour cream if desired.
  5. Fold the sides of the tortilla in and roll tightly to enclose the filling. Place in a preheated skillet or on a baking sheet. Top with extra cheese if preferred. Cover and cook over low heat or bake at 350°F (175°C) for about 10 minutes until the cheese melts and is bubbly.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 1-2 minutes or in the oven at 350°F (175°C) for about 10 minutes. To maintain crispiness, reassemble and re-melt cheese in a skillet or oven before serving.
