- ½ cup grated Parmesan cheese
- 2 tablespoons unsalted butter, melted

Instructions
- In a small bowl, dissolve the yeast and sugar in warm water. Let sit for 5 minutes until frothy to activate the yeast.
- In a large mixing bowl, combine flour, salt, and olive oil. Add the yeast mixture and knead until a smooth dough forms. Cover and let rise for about 1 hour until doubled in size.
- Punch down the dough and transfer to a floured surface. Roll into a ½ inch thick rectangle. Spread shredded mozzarella evenly over the dough, then sprinkle with grated Parmesan. Roll tightly to enclose the cheese, then cut into 1-inch wide strips. Twist each strip slightly.
- Preheat oven to 375°F (190°C). Place breadsticks on a parchment-lined baking sheet. Brush with melted butter mixed with garlic powder.
- Bake for 15-20 minutes until golden brown and crispy on the edges. Brush with more melted butter and garnish with chopped parsley if desired. Sprinkle extra cheese on top for added cheesiness. Serve warm.
