Instructions
- Season beef with salt, pepper, and paprika.
- In a skillet, heat olive oil over medium-high heat. Sear beef until browned on all sides, then transfer to slow cooker.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Pour garlic butter mixture over beef in the slow cooker, add thyme, and cook on low for 6 hours.
- Garnish with fresh parsley before serving.
