Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 3 ripe peaches, sliced
- 1/2 cup of your favorite BBQ sauce
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh herbs (such as cilantro or parsley) for garnish
Instructions
- Preheat your oven to 400°F (200°C). In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, and pepper. Rub this spice mix all over the chicken breasts. Arrange the sliced peaches around the chicken in a baking dish.
- Drizzle olive oil over the chicken and peaches. Brush the BBQ sauce generously over the chicken breasts to ensure a flavorful caramelized finish.
- Place the baking dish in the oven and roast for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). The peaches will soften and caramelize, adding sweetness.
- Remove from the oven and let rest for 5 minutes. Garnish with fresh herbs. Serve with sides like rice or roasted vegetables for a complete meal.
Notes
- Use ripe peaches for maximum sweetness and flavor.
- Frozen peaches can be used—thaw and drain excess moisture before roasting.
- Ensure your BBQ sauce is gluten-free if following a gluten-free diet.
- Feel free to add other fruits like pineapple or vegetables like zucchini for variety.
