- 4 boneless, skinless chicken breasts
- 2 ripe peaches, sliced
- 1/2 cup barbecue sauce (choose your favorite)
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Rub chicken breasts with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Place seasoned chicken on a baking sheet lined with parchment paper or lightly greased dish. Bake for 15 minutes or until internal temperature reaches 165°F (75°C).
- Slice peaches and set aside. Brush barbecue sauce over chicken near the end of baking. Add sliced peaches around chicken in the baking dish.
- Return to oven and bake for an additional 10-15 minutes until peaches are tender and sauce is caramelized.
- Remove from oven, let rest a few minutes, garnish with cilantro or parsley if desired. Serve hot and enjoy.
