Instructions
- Preheat oven to 350°F (175°C). In a 9-inch round cake pan, pour melted butter. Sprinkle brown sugar evenly over the butter. Arrange sliced peaches in concentric circles over the sugar mixture. Set aside.
- In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat eggs, vanilla, and milk until well combined. Gradually add dry ingredients to wet, mixing until smooth. Pour batter evenly over peaches.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. The cake should be golden brown and fruit caramelized.
- Cool for 10 minutes after baking. Carefully invert the cake onto a serving plate to reveal the peach topping. Serve warm or chilled, garnished with fresh mint or whipped cream if desired.
