Ingredients
- Beef steak (such as round steak or chuck steak)
- Salt and pepper
- Bell peppers (any color), sliced
- Onion, sliced
- Diced tomatoes
Instructions
- Season the beef steak generously with salt and pepper. Place the seasoned steak in the bottom of the crockpot.
- Add the sliced bell peppers and onions on top of the beef steak in the crockpot.
- Pour the can of diced tomatoes over the beef and vegetables. Ensure everything is evenly distributed.
- Cover the crockpot with the lid and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender and easily shreds with a fork.
Notes
- Sear the Beef: For an even richer flavor, quickly sear the beef on all sides in a hot pan before placing it in the crockpot.
- Adjust Seasoning: Taste the sauce during the last hour of cooking and adjust the seasoning (salt, pepper) as needed.
- Thicken the Sauce: If you prefer a thicker sauce, mix a tablespoon of cornstarch with two tablespoons of cold water to make a slurry. Stir the slurry into the crockpot during the last 30 minutes of cooking.
