These vibrant Cookie Monster cookies are a fun, chewy twist on classic chocolate chip cookies—packed with blue-dyed dough, colorful candy chips, and marshmallow pieces for a playful, kid-approved treat.

  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/4 cup blue gel food coloring
  • 1 cup chocolate chips
  • 1/2 cup rainbow candy-coated chocolate chips
  • 1/2 cup mini marshmallows

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, beat butter and sugars until creamy. Add eggs and vanilla; beat well. Mix in blue food coloring.
  4. Gradually blend in flour mixture until combined.
  5. Stir in chocolate chips, rainbow candy chips, and marshmallows.
  6. Drop by rounded tablespoons onto prepared baking sheets.
  7. Bake for 9–11 minutes until edges are golden but centers are still soft.
  8. cool on baking sheet for 5 minutes before transferring to wire racks.

Notes

  • For deeper blue color, add more gel food coloring gradually.
  • Do not overbake—cookies continue to firm up as they cool.
  • For a fun twist, press extra marshmallows on top halfway through baking for toasted peaks.
